Each fillet is dry cured in small batches,
with a unique blend of salt and sugar, then smoked in the
fine Scottish tradition to lock in the succulent flavor of
the hardwood chips. And, to ensure that it has the greatest
flavor, MacKnight is double smoked.
Fully trimmed; we painstakingly remove
all dark muscle meat from the fillet, and each slice is ready
to use in a variety of delectable mouth watering recipes.
